Carrot and cranberry cupcakes




This is diffinetly one of my favorite desserts and this is an amazing recipe. I did this cute and delicious cupcakes for my little monkey´s first birthday party and it was a huge success. Here´s the recipe.

Ingredients:

CUPCAKES
3 cups grated carrot
2 cups regular flour
1 ½ cups sugar
2 tsp. baking soda
1 cup corn oil
2 tsp. cinnamon
1 tsp. salt
3 beaten eggs
½ cup chopped walnuts
½ cup cramberies or raisins

 FROSTING
1 large cream cheese room temperture
2 tbsp. milk
1/4tsp. vanilla essence
2 cups confectioners sugar

Preparation:

1.     Preheat the oven 350F and set cupcake pan with  the cupcake papers.
2.     Mix the dry ingredients (flour, sugar, cinnamon, baking soda and salt) add the oil and beaten eggs until getting a fluffy mix.
3.     Mixing with a spatula add the carrot, cranberries and walnuts.
4.     Put the mix into the cupcake papers and bake for 20 minutes.
5.     Let them cool down.

For the frosting:
1.     Mix the cream cheese until it gets softer, then add vanilla and milk until you get a soft mixture, then add the confectioners sugar until you get the texture you want. You can add food colorant.

Then decorate the cupcakes with the frosting and add your special touch I made the little monkey flags and add sugar with some orange colorant.

Zucchini, Chicken and Hummus Skewer.


After the success of one of my zucchini recipes I decided to share with you one of my favorite dishes with this ingredient, I took this idea from one of my french cuisine kitchen books and what I like the most of it is the simplicity.

As I been cooking just for myself lately I don’t want to spend lots of time or money just in me, so I´ve been trying to cook simple and healthy meals just for one, its what I call lonelybutyumi. So I hope you enjoy this super easy, delicious and healthy recipe for one.

Ingredients:

·      ½ chicken breast without bone.
·      1 large zucchini cabbage.
·      ½ tsp. ground cumin
·      1 tbsp. olive oil
·      2 tbsp. hummus
·      salt and pepper
·      skewer chops (I used some chops from the last time we ordered sushi)

Procedure:

1.     Cut the zucchini and the chicken in medium slices.  Mix those ingredients adding the cumin, olive oil, salt and pepper and mix well.
2.     Do the skewers alternating one zucchini and one chicken slice.
3.     Grill in a hot pan. This might take a while but its very important that is well done, it might take 15 mins.
4.     Serve on a plate and add the hummus on one side.

I some times like to add soy sauce. Enjoy!

Cheerios Treat



Espero la próxima semana con más tiempo (de vacaciones de la maestría) subir más fotos de lo que hice para el cumple de Iñaki y de un baby shower que tengo mañana. Pero mientras subo estos cheerios treats, los hice con cherrios porque además de que son los favoritos de mi niño, no había rice krispies en el súper. 

 Esta es la receta original que encuentras en http://www.ricekrispies.com/en_US/recipes/the-original-treats.html#/en_US/recipes/the-original-treats  y son definitivamente una garantía porque son regalados y a todo mundo le gustan.

Ingredientes:


  • 3 cucharadas de mantequilla o margarina (1/4 de barra) y un poco más para el refractario.
  • 1 paquete de bombones (40 piezas)
  • 6 tazas de rice krispies o cheerios (sin sabor)



Forma de preparación:


  1. Ponle un poco de pam o mantequilla a un refractario.
  2. Derrite la mantequilla en una cacerola grande, después agrega los bombones y bate a fuego bajo hasta que se derritan por completo.
  3. Retira del fuego y poco a poco agrega las 6 tazas de cereal.
  4. Coloca la mezcla en el refractario esparciendo por todos los lados. Con las manos mojadas para que no se te pegue, aplana la mezcla por todo el molde hasta que este parejo y plano.
  5. Dejado enfriar y cortalos en cuadritos chicos y sirvelos. Yo los puse en bolsitas de celofán con listones.
Durán aproximadamente una semana.
